Ingredients
- 1 whole brisket, trimmed (12 to 14 pounds)
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons fresh ground pepper
- 2 tablespoons paprika
Instructions
- Before you can begin to cook, you need to preheat the Traeger grill. Turn it on, set its temperature to 225 degrees Fahrenheit, and cover it with a lid for 15 minutes to do so.
- To prepare the rub for your brisket, mix together the 2 tablespoons each of salt, garlic powder, onion powder, fresh ground pepper, and paprika.
- Generously season your brisket with the rub that you prepared.
- Take this seasoned brisket and place it on the grills of the Traeger grill directly.
- Keep smoking it for 5 to 7 hours. During this time, check for the internal temperature of the brisket. The step is done when the internal temperature reaches 165 degrees Fahrenheit.
- Take the brisket out of the smoker and place it on either butcher paper, or a heavy-duty foil.
- Make sure that you place it on the center of the paper or foil, and fold it in a way that makes it leak proof. You should place it seam-side down in order to make the weight of the brisket hold the opening down, and keep it closed.
- Place this folded brisket back into the smoker.
- Continue smoking it for another 3 to 5 hours at 225 degrees Fahrenheit. Until the internal temperature of the brisket reaches 204 degrees Fahrenheit.
- Once this internal temperature is observed, the brisket is ready to be taken out.
- Let this freshly smoked brisket rest for around 30 minutes. At the end, cut it against the grains to serve it.

No matter what you hear, you should always smoke a brisket fat side down.
This prevents the fat from washing away the seasoning, once it starts melting.
